Ingredients
- 1/2 C Fresh lime juice
- 6 T Olive oil
- 8 chicken pieces, with skin and bone
- 3 oz mushroom caps, sliced
- Salt and black pepper to taste
Preparation
- Preheat broiler. In a small bowl, mix limejuice and 2 tablespoons of olive oil. One piece at a time, dip chicken in mixture to coat each piece completely. On foil-lined baking pan, arrange chicken in single layer and sprinkle with salt and pepper. Arrange broiler rack at least 6 inches from heat. Broil chicken 12 to 15 minutes, then turn and pour remaining coating mixture over chicken. Broil another 12 to 15 minutes more, or until fork can be inserted into chicken with ease.
- While the chicken cooks, place remaining 4 tablespoons of olive oil and the mushrooms in a medium skillet and saut over medium-high heat for 5 minutes. Set aside.
- When the chicken is done, pour mushrooms and oil over chicken and return to oven for about 2 minutes or until mushrooms are hot.
