Ingredients
- 8 C dark green leaf lettuce, torn
- 1/2 med cucumber, sliced 1/8 in thick
- 1 C shredded red cabbage
- 4 C chopped green bell pepper
- 2 T white vinegar
- 1 clove garlic, minced
- 1/4 t dried marjoram
- 1/8 t salt
- Dash black pepper
- 1/3 C olive oil
Preparation
- In a salad bowl, gently mix lettuce, cucumber, red cabbage, and green pepper, chill for an hour if time allows.
- While salad is chilling, place vinegar, garlic, marjoram, salt, and black pepper into a small bowl and mix thoroughly. Gradually mix in oil until dressing is well blended and slightly thickened.
- Pour olive oil mixture over chilled salad and toss gently.
